BBQ Chicken Pizza
Flat Bread/Pizza Crust (We buy packages of flat bread from Costco and just use those)
BBQ sauce
Grilled Chicken (I use 1 chicken breast for 4 flat breads. I just cut it up in small pieces, cook in olive oil over the stove, season with salt and pepper)
Caramelized onions (I cut up a yellow onion and cook it in butter and brown sugar. Sorry I dont have measurments, I just do whatever)
Cilantro (Or green onions if you dont have cilantro)
Mozzarella cheese
Cook at 375 for 20 (ish) minutes

Cheesy Bread
INGREDIENTS:
for the pizza dough-
1 cup warm water
2 1/4 teaspoons active dry yeast
1 tablespoon honey {or sugar}
2 teaspoons salt
2 tablespoons olive or canola oil
3 cups bread flour {give or take 1/2 cup...depending on the heat & humidity}

for the cheesy garlic bread sticks-
1/2 recipe Fail-Proof Pizza Dough from above
2 tablespoons softened salted butter
2 cloves garlic, finely minced
1/4 cup grated parmesan cheese {use the real stuff!}
1/4 pound grated mozzarella cheese
{salt & pepper, if desired}

DIRECTIONS:
For the pizza dough--In a large mixing bowl, preferably that of a stand mixer, stir yeast and honey into warm water. Sit for 5-10 minutes or until bubbles form and mixture starts to foam. This tells you that the yeast is alive and kicking. Pour in salt, oil and half the flour and mix. Once that flour is incorporated, start adding flour in bit by bit until you get the pizza dough to the consistency you want: slightly tacky, but when you touch it it doesn't stick to your hands. Once you reach this stage, turn the mixer on high to knead for 6 minutes. Turn a timer on and walk away! Resist the temptation to stop earlier than 6 minutes! That seems to be the magical number. It should look something like this when it's done! The dough should be smooth and easy to work with. And the bowl should be clean! Lightly grease the bowl & the dough so it doesn't dry out, cover with plastic wrap and let it rise 1-2 hours. That's it! Use as desired.
For the Cheesy Garlic Bread Sticks- Preheat oven to 500 degrees with pizza stone inside. {If you don't have a pizza stone, use an upside down cookie sheet} Mix butter and garlic in a small bowl and set aside.
Spread pizza dough out into a 12-inch circle on parchment paper. {This makes it easier to transfer to the pizza stone.} Spread the butter and garlic mixture over dough and top with parmesan and mozzarella cheeses. Top with a light sprinkling of salt and pepper, if desired. Serve with marinara sauce.

Flatbread Pizza
Flatbread Pizza
Base:
- Naan or other flat bread (we love the garlic kind from Trader Joes but you could also make your own!)
Sauces:
- Alfredo sauce (either store bought from a jar or home made. I use the "Guiltless Alfredo" recipe from the same ourbestbites site that I posted previously)
- Mix some Alfredo sauce with pesto (optional)
- Red sauce
Toppings (mix and match)
- Fresh baby spinach leaves, coarsely chopped or ripped apart
- Cooked chicken, rotisserie chicken (optional, I keep mine vegetarian)
- Caramelized onions*
- Sun dried tomatoes
- Pepperoni
Cheeses:
- Mozarella
- Sharp cheddar
- Feta
- Parmesan
Directions:
Layer the above ingredients on flatbread (mix and match) and cook in a 400 degree oven for about 10 minutes. (Alternatively, put under broiler on high for 3-5 minutes). Slice and serve!
*Thinly slice onions and saute them in a skillet on med-low heat with a couple of pats of butter. After about 15 minutes when they’re nice and soft add a sprinkle of sugar (either brown or white) if you want to enhance the sweetness. Continue cooking until they’re caramel colored. It can take 20-30 minutes depending on the heat of your pan and the thickness of the onion. You could make them ahead of time and just store them in the fridge.
Notes:
This is simple but tastes super yummy. It reminds me of a flat bread pizza place in Maine I used to go to in high school! I like to make a variety of different little flatbread pizzas. I do some traditional with red sauce, pepperoni, and mozarella or sharp cheddar for the boys. Then I mix and match the other above sauces and cheese and toppings for a variety of tastes. So yummy! The variety of different types is nice esp if you have people over. I also like to have extra sauce on the side for dipping!
