Peanut Chicken and Sesame Broccoli
Peanut Chicken
Ingredients:
- 4 chicken breasts
- ½ C creamy peanut butter
- 2 T lemon juice
- 2 T brown sugar
- ½ C water
- ¼ C soy sauce
- 4 garlic cloves (minced)
- ¾ t ground ginger
- ½ t crushed red chili pepper (less/more depending on how spicy you like it)
Directions:
Slice chicken breasts into strips. Combine all ingredients (except chicken) in a saucepan; cook for about 2 minutes, stirring constantly. Marinate chicken in this mixture for at least 6 hours. I usually do this in the morning and then cook it at night.
You can cook it two ways. 1)Skewers and grill them or 2)Bake chicken in sauce in 9x13 pan at 375F until done (usually about 30-35 minutes, depending on thickness of chicken, you may want to turn after 15 minutes and check how well chicken is done then). We love the sauce (although it is intense) so I often double the sauce and bake it in a smaller dish (9x7) to make it extra saucy. If you don't like sauce as much, you can bake in the larger pan or on skewers.
Notes
I serve this with brown rice (can cook with water or broth) and sesame broccoli (see recipe below) as well as mandarin oranges (canned or fresh). I got this recipe from a friend in England and we have loved it ever since. When I ask Jordan what he wants to eat while meal planning, he will often request this.
Sesame Broccoli
Ingredients
- 1 tablespoon olive oil
- 1-2 teaspoons sesame oil
- 2 cups chopped broccoli
- 1 tablespoon sesame seeds
- salt to taste
Heat oil in a large skillet over medium-high heat. Saute broccoli and sesame seeds for 5-7 minutes, or until tender crisp. I often leave the lid on the skillet until the broccoli is the tenderness we prefer.
